Butter Is Better
It’s no secret that I stopped using margarine a few years ago. I now cook with the best of Irish ingredients that I can afford. I stopped using margarine, simply because butter is better. It’s not just that I cook with butter. When the wrapper is empty it gets folded and I pop it into the door of the fridge. Every single roast chicken is wrapped in at least 1 butter wrapper and it makes for the most amazing chicken.
Yesterday’s recipe for a chocolate banana cake uses up plenty of butter too!
In celebration of the Kerrygold Ballymaloe Literary Festival of Food & Wine 2014, Rachel and Darina Allen have teamed up with Kerrygold to launch a nationwide search for Ireland’s favourite, most scrumptious family recipes. Darina has been known to advocate wrapping a whole chicken for roasting in a muslin cloth soaked in butter, I say use the wrapper instead!
Running from Thursday, 24rd of April until Wednesday, 14th of May, food lovers can get involved by simply submitting a family recipe using Kerrygold Butter and a photograph of the dish to www.Kerrygold.ie/competition. The winner judged by Rachel and Darina Allen will win a place, for two, on Rachel Allen’s Everyday Kitchen cookery course in the world renowned Ballymaloe Cookery School in Cork plus accommodation for the duration of the experience.
I only wish I could enter!
Anyway I was sent the most magical photos of Darina & Rachel Allen messing in the kitchen (see above). They really made me smile and remind me of the banter when Mam and I cook together. Why not celebrate your family recipes and see where they will get you?
