Lemon And Lime Cake
Baking in this house requires organisation because the 2 year old understands when I’ve something baking. He likes to sit in front of the oven and demand instant results. His naps are beginning to shorten too so if I want to bake I need to be able to lash a cake batter together rapidly and have it cooked and cooling by the time he wakes up.

Blueberry Slice
I buy fresh berries in bulk and then freeze them to use over the winter. Berries go into smoothies, baking, jellies, salads and sometimes into something that is so decadent you won’t want to share. In fact you’ll want to eat this blueberry slice right out of the baking tray.

Chewy Fruit Flapjacks
I realised yesterday that I hadn’t baked so far this year. Yes I know, that’s crazy talk coming from me. Normally I’m cranking up the oven at least 3 times a week to bake treats for the boys or the weekend. There are no excuses for this type of behaviour and of course I had to fix it. After consulting with a few readers on the Facebook page, I made these chewy fruit flapjacks.

Cinnamon Rolls
A few weeks ago my friend Deb posted a picture of some screen-lickable cinnamon rolls she’d baked. Seeing as she’s in Tipperary and I’m just outside of Dublin it’s not as if we can arrange a delivery so I decided to give them a go and bake them myself.

Banana Muffins
I’m sure it’s not just me who feels like my children have more of a social life than I do? Normally I love my wall planner. I work 7 weeks ahead of myself from a meal and activities point of view. It’s helpful when I’m working on projects and coordinating our children’s social life. Today however I realised that I’ve got 5 days at home and then I’m off to Congregation. This will be the first time that I will have left the toddler (now 2) on his own for longer than 8 hours.

Healthy Carrot Muffins
The 5 year old and I are still wrestling with the contents of his lunchbox. He is not brilliant with change, so I’ve kept his lunches simple and included only things I know he will eat. Food for school is after all fuel; there is no point in challenging him too much if he’s not going to eat what I put in the box. There is also a healthy eating policy in school. Not that it makes a huge difference to us as chocolate would be off the menu anyway (it’s kept for treats), but the school does encourage home-baked goods in the lunchbox.

Rosewater Shortbread
While I may have a frugal food blog, there are a few things in life that I don’t like to skimp on. It goes without saying that my preferred brand of tea is non-negotiable when it comes to the shopping list. When I’m baking I don’t compromise as shortcuts when it comes to quality always result in an item that’s less than perfect. Today’s recipe is a rosewater shortbread. Actually it’s not a real shortbread as I use an egg in the mixture, classic shortbread only has 3 ingredients: butter, sugar and flour but read on if you’d like to find out why I’m playing around with flavours today!

When I wear my heart on my sleeve I open myself up to people holding and forming opinions about me. Sometimes they upset me and sometimes I feel like screaming. Maybe it’s time I cleared some stuff up.

Ice Cream Cake
I apologise in advance as I rarely post 2 sweet recipes one after another. I’m scraping the bottom of the fridge and freezer to use up my ingredients. I’ve done my usual store cupboard stock take and found a couple of bits that needed using up. I know, I know, it’s such a hardship to eat an Ice Cream Cake in the warm weather.

Malted Double Chocolate Marshmallow Brownies
If you read my blogpost of yesterday evening you’ll understand that I’ve had better weeks. Just after I had taken the photographs there was a knock to the door and there was a delivery of a brand new hand mixer in the most dinky blue colour. It couldn’t have come at a better time. Tomorrow I’ll be baking up some goodies and bringing the results to a Tea Party in aid of MS Ireland that my sister, Olivia has organised. I don’t think I’ve ever mentioned it here on the blog but my sister suffers from Multiple Sclerosis herself.
