Super-Quick Salmon Noodles

Parents need to put themselves under less pressure to cook the ‘meat and 2 veg’ dinner and instead embrace speedy cooking dishes. Especially now, as the weather has been so warm and tempers can get frayed in the heat, family meals that can be prepared with minimal fuss are the way to go.

This is a variation on a speedy noodle salad that I hope you will enjoy. If you look carefully you’ll see that there is little to no cooking in the recipe and the ingredients can be easily assembled.

Have you discovered hot smoked salmon fillets yet? They are ready to eat straight away, or you could boost that smokey flavour by popping them onto the barbecue for a few minutes to warm through.

Ingredients

  • 2 hot smoked pepper salmon fillets
  • Dried egg noodles (1/2 pack)
  • 1 grated carrot
  • 3 scallions, finely sliced
  • ¼ cucumber finely sliced
  • 1 lime

Method

Pour boiling water over the noodles, stir and leave to one side for 10 minutes to cook through. After 10 minutes, drain away the water and stir in the carrot, scallions, and cucumber. Squeeze over the juice of 1 lime as a dressing. Flake the salmon into the noodles and stir then serve immediately. Can be eaten hot or cold and this meal is slimmer-friendly as there are no added fats.

    And here was me wondering what to do with some leftover salmon for dinner. Noodle salad. That’ll do nicely. Especially as I have five cucumbers sitting on the kitchen counter. Now I just need to work out what to do with the other four. There’ll be three more ready tomorrow. Pickling time I guess
