Alternative Breakfast
I’m still here, still sorting out some life laundry type stuff. The decluttering has escalated. I have turned off all push notifications on my phone. This means I don’t see if somebody has emailed me unless I have the phone in my hand. I don’t see a mention on any social media network. It’s been really liberating! I’m learning only to check my emails when I’m free. I’m focussing on my work; new projects, clients, and clearing the house of stuff that I don’t need. The 5-year-old goes back to school this week and I’m looking forward to getting back into a routine. Mind you I’m not looking forward to…

Irish Soda Bread
Irish Soda Bread, what’s not to love? Interestingly this is not a recipe that we ate regularly in my childhood. Mam has her own, rather special version that I will share with you in the future with her permission. This recipe though is very close to that which I learnt to bake in school.

Lazy Porridge Pancakes
Are these lazy porridge pancakes the new way to eat your porridge? I’m not certain how new this concept is. I vividly remember the pot of porridge and water going on the (cold) hob overnight to soak before the next morning from my childhood. If you’re not a big fan of eating wet porridge in the mornings but still want to get some oats into you then this is another option.

Irish Brown Soda Scones
In our house we bake these Irish brown soda scones on Christmas Eve because we drape them with smoked salmon on Christmas Day.

Breakfast Muffins
Last Saturday morning we dragged ourselves out of bed along with the kids and into the car at 2.30am. This time is normally reserved for night-feeds (with which I’m all too familiar) and journeys to the Airport to catch a flight (that hasn’t happened in years). However on that morning we were joining thousands of other walkers and runners at the Phoenix Park in Dublin to walk 5km from darkness into light in order to raise funds and awareness for Pieta House. In fact the 5km wasn’t restricted to just Dublin and there were other locations all across Ireland where people came together to mark the occasion.
