Super-Quick No-Cook Dinners in the Summer

    31/05/2015 /2 Comments

The weather is sunny and it’s time to have dinner. The last thing we want to do is cook. So here’s some ideas for no-cook dinners in the Summer where the toughest bit of heat you’ll have to handle in the kitchen will be the kettle.

    Cherry Chocolate Cheesecake Pots

    07/05/2015 /6 Comments

Why would you want to make this cheesecake? Well you could be on a low fat diet, trying to lose weight, or maybe you might be trying to reduce your sugar consumption. It could be all of the above, as is the case with my family members. While I won’t identify them on the blog, I can tell you that in the past 6 weeks, these 3 inspiring people have managed to lose a combined total of just under 3 stone (that’s 42lbs or 19kg). You don’t need to cook, nor do you need any fancy equipment to be able to make these cheesecake pots, just make sure you have…

    Raspberry Curd

    19/03/2015 /9 Comments

What is curd? Sweet curd is made with 4 main ingredients. 3 of which are always butter, sugar, and eggs. The 4th ingredient is normally a tart or citrus flavour. Once made properly it sets to a dropping consistency. This is because both the butter and the egg yolks play a part in the setting process. You’ve probably heard of lemon curd. It is extremely easy to make – in fact, if you want to see me make it, plus get the recipe you can head on over to my lemon curd recipe by clicking the image below.

    Grilled Turkey Wrap With Pesto

    06/07/2014 /1 Comment

I recently had the opportunity to work with a piece of kit from Tefal called the OptiGrill. I have to emphasise I am under no obligation to share my recipes here on the blog. However, I am genuinely impressed with the grill; how it cooks food, how I was able to use it for many versatile meals, and it has even converted my other half to cooking at home more.

    Eton Mess

There are days that I love nothing more than working in the kitchen on “oven watch”. These type of days are when I’m not stuck at my computer for hours on end, and the sun isn’t splitting the stones. Lately though, with the sunny weather and my two boys being that bit older all they want to do is to play out in the front garden with the big boys. That’s all great, except we have an open garden system where we live and that means we don’t have gates that I can close to keep the boys safe and the road is very close to the house. So if…

    Take 1 Chicken, Meal 1 of 3

    22/06/2014 /5 Comments

I have this thing about roast chicken. Maybe it’s something from my childhood but the smell of a roasting chicken in the oven makes me feel like a Bisto kid when I walk into a house. It’s the ultimate Sunday roast for me, and I normally cook it once or twice a fortnight. Most people don’t realise how frugal a roast chicken can be, maybe because they throw away the carcass after the main event (the roast dinner) or perhaps because they just see the initial cost of buying a chicken. Have you figured out that if you’re careful a roast chook will last for 3 meals? You can expect…

    Fish And Chips

    11/06/2014 /7 Comments

Fish and chips; not the most thrifty meal if you go to the local chipper, nor is it the most healthy either. Don’t get me wrong, there is a certain allure of a brown paper bag laden with piping hot chips, salt and vinegar every now and again. If you’re feeding a family that sort of meal is saved for a treat. This meal is a healthier,  version of classic fish and chips. It makes the most of cheap cuts of white fish that you can pick up for far less than cod or haddock in your fishmonger or in the supermarket. For bonus points I’ve sneakily found a way…
