    Beetroot Hummus Recipe

    Traditional hummus is a great way of getting more fibre into your diet, and my children love it. I use the flavours from hummus to introduce other vegetables to the kids and this pink hummus is always a big success. Firstly it’s pink! Secondly it’s got beetroot in it with no olive oil, which I’d use for regular hummus, so it’s healthier. Cooked beetroot does not mean pickled beetroot in a jar. Regular cooked beetroot has a wonderful sweet, earthy flavour.

    Sometimes when my husband works a late shift I’ll cook a regular meal for the kids, and then we sit down together when he gets home. It’s not that I’m advocating cooking individual meals for different family members though! It’s simply that it’s nice to have somebody to sit and eat with at the end of a long day in work. This griddled turkey steak with vegetable stack is a wholesome, gluten free, paleo friendly dish that will keep you coming back for more. It’s well balanced and light on the stomach if you don’t like eating too much late in the evening.

    I dropped the 6-year-old to school and I walked home with the small boy; like we always do. Yesterday I had to nip into the Supermarket for some messages on the way and my heart sank. Right at the front door there was floor to ceiling displays of sweets and chocolate based on a Hallowe’en theme. It was a couple of metres long and I have to walk past it to get to the fresh fruit and vegetables. Couple that with the massive aisle ends of chocolate (most popular brand in Ireland), also of fizzy drinks, and the cash register gauntlet of sweets and chocolate it’s difficult to say no.…

    A Lighter October

    I’ve lost 17lbs since the start of September. This is a lighter October than last year or the year before. I’ll rewind to a point last Summer where I watched “Fat Sick and Nearly Dead“; at the time I thought it was a great film (it’s available on Netflix) but I didn’t connect Joe Cross’ lifestyle to mine.
